Roberta's Bean & Corn Salsa
An easy and healthy staple. Fresh cilantro is the key ingredient!
- 1 can black beans, drained and rinsed
- 1 can corn niblets, drained
- 1 large handful of fresh cilantro, rinsed, dried and coarsely chopped
- 1 container of salsa (fresh is best, but jarred works well, too; even more people complimented the recipe when I used Santa Barbara Peach and Mango Fresh Salsa)
Mix together in a bowl and enjoy. Great with chips, especially Scoops. Also great over rice or scrambled eggs, or just eaten as a salad.
