Johnny's Chicken and Rice
Johnny at MKC taught us this kid-favorite!
- 1 can cream of chicken soup
- 1 soup can full of milk
- Diced boneless uncooked chicken
- Garlic salt (or garlic powder and salt)
- A sprig or two of fresh rosemary (optional, but very nice; this addition was Steve's idea)
- Cooked rice (when camping, we use Uncle Ben's Instant Rice)
Mix together in a pot all ingredients except rice, bring to a boil and then lower heat and simmer until the chicken is cooked through. Taste and add more garlic salt if necessary; it might need more than you think! Serve over rice. Note: Johnny told me that this is actually Beth's mother's recipe. The faces of the camping kids really lit up when I told them we were having MKC Chicken and Rice!
